A traditional jamaican cooking sauce or gravy,. Use as a pour over sauce for chicken, prawns or vegetables. Warm and serve. Add to soups, stews or curries.

What we say...
This sauce is based on traditional caribbean sauce known also as 'oil down'. After the coconut flesh has been finely grated, it is mixed with a little water and strained. This milky liquid is then poured over salted mackerel (or vegetables). Seasonings are added and this sauce is cooked slowly until reduced. The chaps at Walkerswood have made this process a whole lot easier - spices are already simmered in creating a beauifully rich cooking sauce with just a hint of the all important scotch bonnet chilli. It can also be blended well with curry or cream and white wine.
