Peri Peri SaucesThe Peri Peri, Peri-Peri (or even Peli-Peli) is the name used in the ex-Portuguese colonies of Mozambique and Angola to describe the African bird's-eye chilli. The use of Peri Peri Sauce to add heat and flavour to West African soups and stews soon spread to Portugal where it has become synonymous with the cuisine of the country. Nando's, the Portuguese-themed chicken restaurant, actually originated in South Africa from Portuguese who left Mozambique, uses piri-piri in many of its dishes, and helped popularise them worldwide and also created a love of the sauce in South Africa where it is used in a variety of dishes. We have included some of our favourite Peri Peri Sauces here, from the classic citrus infused Portugese style sauce to the richly spiced South African inspired sauces. | ||||||||||||||||||||||||||
