Also known as the 'Chiles Negro' this is long dark chilli is similar to the Ancho variety.
Mild and sweet, with a rich chocolatey flavour this is an ideal pepper to add depth and richness to stews and chilli dishes.
This large fleshy pepper needs a good soak/cook to fully release its flavour but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper on a hot pan before use.
