Dried Guajillo Chillies (50g)
A classic Mexican chilli pepper, much used in many Mexican dishes, but also the chilli that adds the heat to the North African Harrisa paste.
Milder in heat than its cousins and with a sweet flavour this large fleshy pepper needs longer cooking/soaking time than most but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper in a hot pan before use.
