A large triangular, dark pepper which is the dried version of the popular Poblano Chilli.
Extremely popular in Mexico this is a must have ingredient in Enchiladas. This is a mild, sweet chilli with a deep almost chocolatey flavour that adds richness to cooking.
Like the Guajillo this large fleshy pepper needs a longer soak/cook to fully release its flavour but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper on a hot pan before use.
