Another great sauce from the master of hot sauce-making, Dave. We love this deliciously fruity sauce. It makes a great addition to chicken, fish, salads and even ice cream.

This stuff is a very good sweet sauce. the spice is very mild. Ok for small children as it's no more spicy than ground white pepper. This reminds me of a colemans sauce once avalable which was based on pineapple and pepper. Goes wonderfully with cold meats. either on a plate or a sandwich. Brings out the flavour of a good quality ham superblyl. with Chicken try with a smidge of lemon grass if you can. You don't need much. (or the chicken having a dash of lemon juice before) I lent it to a friend running a pub as i'm experimenting with different sauces off this site. they tried it with complementary mini spring rolls. A very small amount of the sauce was poured in small ramikins as a dip. EVERYONE loved the stuff. I never thought of using it that way but using it as a dip for those small bit size snacks at a party/gathering this stuff is tasty and very popular. People were scooping up the last of the sauce on their fingers after the food ran out. can't wait to try this in ice cream Down side, I didn't find it goes with pork, too sweet (although I'm not a great lover of pork so not the best person to comment on there). just dosn't go with a salami or similar cold meat which may be as heavy/oily in taste
