The chile heat in this sauce comes from Bhut Jolokia, a chile pepper from India tested by Dr Paul W. Bosland (New Mexico State University, Las Cruces NM) and measured at 1 million Scovile Heat Units. Caution: your taste buds may cry out "Holy Jolokia"!
